OUR WINE CELLAR

 

The "Vins Miquel Gelabert" wine cellar is inscribed in the D.O. de Mallorca Pla i Llevant and is actually the smallest and one of the newest (since 1985) wine cellars, that uses traditional methods, in Mallorca. Nevertheless we can assure that we are pioneers in the constant experimentation of new techniques and new ways to treat the grapes, the mosto (grape juice) and wine, with the aim that it reaches the consumer, with minium handling and treatment.

All grapes are hand picked and placed in 20 Kg boxes. In some smallholdings, the grapes are picked depending on their ripeness. In this case there are 2 - 3 grape harvests.

Due to the fact that the climate in Mallorca is very hot during the grape harvesting, we use the cold as a principal work tool (refridgeration of grapes, special maceration, fermentation,etc)

Except our Chardonnay that ferments in barrels made with French oak from Allier, the rest of the wines are stored in stainless steel to ferment. Then the red wines go into barrels made from American and French oak in our wine cellar, here they repose during 12 months, then after being bottled they return to the wine cellar for a further 6 - 12 months to mature. barril.JPG (46607 bytes)

The white and rosé wines also go down to the wine cellar after beign bottled. None of the wines from our wine cellar go on sale until they have been bottled for at least 3 months.

The whole process of bottling, corking and labeling is done in the traditional manner, either by hand or by small hand operated machinery.

The maturing of our wines takes place in an old underground cellar (1909) in Manacor, wich we restored in 1995, conserving its character and beauty along with its special temperature and humidity, wich are so important in the maturing and conservetion of wine.
