Son Moix Escumós Blanc 2017


The oenologist Miquel Gelabert Miquel produces this sparkling wine with its own character that shows its maximum expression the existing work behind each bottle. A line of wines of very limited production that follows the traditional method/ Champenoise for its 100 % artisanal production.



   Grape varieties: Chardonnay and a small part of Premsal.

   Growing system: Espalier training.

   Vineyard location: Manacor area (Mallorca, Balearic Islands, Spain)

   Designation: D.O.P. Pla i Llevant-Mallorca.

   Type of wine: Sparkling white, Brut Nature

   Alcohol content: 12 % vol.

   Elaboration: The second fermentation takes place in the bottle following the traditional method. It is aged in bottles stored on their lees (sur lattes) for more than 22 months. Disgorged by hand on demand, this wine is a Brut Nature.

   Tasting Notes: Pale yellow with golden highlights. Good integration of carbon with a fine persistent bubble. The nose is intense and fresh. Plenty of ripe white fruit (green apple, peach). Bakery and yeast notes together with subtle touches of brioche and fine toasted nuts. Voluminous and creamy entry into the mouth. Satisfying acidity gives it a fresh and dry palate and a long finish.

   Food pairing: It combines well with fish and seafood (smoked salmon, grilled salmon, oysters, etc.); Asian cuisine such as sushi or tataki; meats like lamb or suckling pig, Iberian ham, cured cheeses, creamy sauce, etc.

   Serving temperature: between 6 – 8 ºC.
