Fermentation: Alcoholic fermentation in temperature-controlled stainless steel vats and malolactic fermentation in barrel.
Ageing: 12 months in new French oak barrels, followed by ageing in bottle.
Tasting Notes: Clean, bright, very intense cherry red colour with purplish tones and dense, slow falling tears. Intense and very complex on the nose, with aromas of eucalyptus, liquorice, very ripe black fruit , lactic, floral, with very light animal aromas (hunting, leather, fur). Powerful and smooth on entry to the palate with good balance between the alcohol, acidity, sugar and tannins some of which have been provided by the new oak and which will polish over time, full bodied and very long on the palate. The aromas found on the nose come through again and linger on the finish.
Food pairing: pairs well with game dishes and hearty stews.
Serving temperature: between 18º – 20 ºC.
