Elaboration: The second fermentation takes place in the bottle following the traditional method. It is aged in bottles stored on their lees (sur lattes) for more than 22 months. Disgorged by hand on demand, this wine is a Brut Nature.
Tasting Notes: Its subtle pale pink colour holds a promise of elegance. Enchanting hue that reveals onion skins highlights. Exceptional finesse, expressed through its subtle constant bubbles very well integrated due to the long ageing. Good intensity in nose. Complex aromatic profile with red fruit (raspberry, blackberry, etc.) and pleasant ageing notes such as brioche and toast touches. Very fresh on entry, creamy on the palate with a nice acidity and dry finish. It leaves the mouth unctuous with a subtle taste of the red fruits and bakery notes.
Food pairing: It combines well with seafood (oysters, scallops, etc), fish such as tuna or salmon or marinated; with Asian cuisine (sushi, tataki, etc.); Carpaccio of meat or white meats and sweet desserts like sorbets or with fresh red fruits.
Serving temperature: between 6 – 8 ºC.
